Here at Fairfax Meadow we believe that great Beef is a result of selective breeding, dedicated rearing & expert maturation.
We believe in British Beef, the cold drizzly climate and lush green grass gives animals the best possible start. Over the years we have developed relationships with our supply farmers which ensure we always have great beef to put on your menu.

Only English beef, sired from traditional breeds and sourced from selected farms in the six counties of South-West England is used to produce Casterbridge. All cattle are finished on a natural grain diet that ensures a controlled protein intake and guarantees consistently high quality. The Meat is processed in Somerset - improving animal welfare and reducing food miles. The Casterbridge beef is then matured on the bone to give it its distinctive succulence & traditional flavour. Paul Bates, the Executive Chef from the Intercontinental Hotel in Mayfair says “with Casterbridge I know I’m serving English Quality Standard Beef where I can be totally confident about the quality and absolutely certain about the consistency. Casterbridge has a lovely flavour : it has good marbling, the fat it is a beautiful colour, it has a delicious aged flavour. It’s tender and moist to the taste”
Historically the three ridings - East, North & West surrounded the city of York and formed the county of Yorkshire, now home to some of the finest farmland in England. The experienced livestock buyers at Ridings Reserve select cattle from Farm Assured farms within this region. The Beef is then matured to Riding’s own special process which maximises the tenderness, flavour & eating quality.

Ballindalloch is a premium range of Scottish Beef from our trusted supplier Millers of Speyside. The Region on the banks of the river Spey is the historical home of the Aberdeen Angus breed developed there in the 1800’s. This all makes a finished beef product that reflects the centuries of breeding skill & maturation techniques, guaranteeing a very high quality product.
