Cotswold Sheep graze free range on the picturesque rolling hills and include carefully selected breeds, all of which produce large ewes, which in turn produce larger lambs to suit the exacting requirements of today’s chefs.

The lamb is selected to meet the strict criteria of Fairfax Meadow’s Casterbridge brand , based on age, size and fat covering, following which it is matured for a minimum of seven days, prior to being butchers to the Chef’s specification

Available from September through to April, This attractive old breed originated in the scenic rolling hills in the border areas of Scotland and England. Monastry records show that the modern breed decended from sheep raised in the 12tth Century.

 The Meat is a favourite with health conscious diners as it is free from superfluous fat with a distinctive flavour.
